Special Mexican Lasagna

SPECIAL MEXICAN LASAGNA


INGREDIENTS:
  • Oil 1 tbsp
  • Chopped onion 1 cup
  • Ginger garlic paste 1 tsp
  • White cumin powder 1 tsp
  • Red Chili powder 1 ½ tsp
  • Chopped tomatoes 1 cup
  • Tomato paste 1/4 cup
  • Kidney beans 1 can (rinsed and drained)
  • Sweet corn 1 can (drained)
  • Boiled lasagna sheet 6-8
  • Mozzarella cheese 1 cup (shredded)
  • Salt to taste
  • Black pepper powder 1 tsp
  • Green coriander chopped for garnishing
  • Mint leaves 5-6 for garnishing

  • METHOD: 

  • 1. Heat the oil in a pan. Add the onion, ginger garlic paste, cumin and chili powder and cook until  the onion is golden brown or softened, about 3 minutes.
  • 2.Then add tomatoes in it with the 1/3 cup of water and the tomato paste.
  • 3. Add the corn, beans and cook about 8 to 10 minutes. Now add salt and pepper in it and stir it.
  • 4. Place lasagna sheet in a baking tray. Spread the bean mixture evenly over the sheets, then sprinkle 1/2 cup of the shredded mozzarella cheese evenly over it.
  • 5. Repeat with 3 more layers, ending with the last quarter of the bean mixture and then the last 1/2 cup of shredded mozzarella cheese. Put most cheese on top most layer.
  • 6. Bake Mexican lasagna  at 180 degree C until it is hot throughout and the top is lightly browned for about 20 minutes. Enjoy..
