Chocolate Fudge Cake

CHOCOLATE FUDGE CAKE




INGREDIENTS:

  • Dark cooking chocolate (pieces) 240 g
  • Caster sugar 1 3/4 cup
  • Plain flour 1 3/4 cup
  • Unsalted butter 250 g
  • Milk 1 1/4 cup
  • Oil 1/4 cup
  • Eggs 2
  • Cocoa powder 1/2 cup
  • Baking powder 1 tsp
  • Coffee 2 tbsp
  • FOR ICING:
  • Heavy whipping cream 1 cup
  • Dark melted chcolate 250 g

METHOD:
  1. Preheat oven to 160C/320F. Grease a baking pan with butter and put butterpaper in it
  2. In a saucepan add sugar, butter, half the milk and chocolate and cook over medium low heat. Stir until the butter and chocolate has melted and sugar is dissolved.
  3. Pour the chocolate mixture into a bowl. Whisk in oil and remaining milk.
  4.  Then put beaten eggs in it and stir well until combined.
  5.  Now add cocoa, baking powder, flour and coffee directly into the bowl. Mix until smooth and there should be no lumps.
  6. Pour into the greased baking pan and bake for 1 hour 10 minutes or until a toothpick inserted into the centre comes out clean. Let it for atleast 5-7 minutes.
  7. Remove sides from the cake pan and transfer to a cooling rack to cool.
FOR ICING:
  1. Take a bowl and add chocolate in it.
  2. Place cream in a saucepan over medium high heat. When reagents simmer add it to the chocolate bowl.
  3. Stir chocolate with a spoon until smooth. Refrigerate for 45 minutes to 1 hour or until thickened.
  4. Spread the frosting over the cake. Use spoon or knife to make it smooth.
